Traditional Cyprus Easter Cheese

Is pale yellow in colour with a mild, buttery flavour and a springy kneaded texture. This is a versatile, multi-purpose cheese made from 100% goat's milk. The white crust is smooth, creamy and springy. Salty, but not too salty, and pungent, with a dry feel in the mouth, it has an underlying sweetness due to the goat's milk.
